Ingredients:
- 2 chicken breasts, boiled or fried
- 1 large fresh pineapple or a can of canned pineapple, cut into pieces
- 150g of hard cheese, cut into cubes
- 2-3 cloves of garlic, minced
- Juice of half a lemon
- 3 tablespoons of olive oil
- Salt and freshly ground black pepper to taste
- Fresh green herbs for garnish
Instructions:
1. Prepare the chicken (you can use leftovers from making broth) and cut it into small pieces.
2. In a large bowl, combine the sliced pineapple, cheese cubes, and chicken pieces.
3. For the dressing, mix the minced garlic, lemon juice, and olive oil. Season with salt and pepper to taste.
4. Pour the dressing over the salad and gently mix to ensure all ingredients are evenly coated.
5. Garnish the salad with fresh green herbs, such as parsley or basil.
6. Serve the salad immediately to preserve the fresh taste of pineapple and other ingredients.
