Ingredients:


- 3-4 medium carrots, peeled and sliced into thin strips or cubes

- 1 medium onion, sliced into thin half-rings

- 2 tablespoons of vegetable oil or olive oil

- Salt and freshly ground black pepper to taste

- Optional: fresh herbs for garnish


Instructions:


1. Heat a skillet over medium heat and add the vegetable oil.


2. Add the sliced onion and sauté until it becomes soft and golden.


3. Add the sliced carrots to the skillet with the onion. Cook over medium heat, stirring occasionally, until the carrots become soft and take on a golden color. This will take about 8-10 minutes, depending on the size of the carrot slices.


4. Season the carrots and onions with salt and pepper to taste.


5. Transfer the cooked carrots and onions to a serving dish and sprinkle with fresh herbs.


6. Serve hot as a side dish or as a standalone dish.
