Ingredients:


For the salad:

- 2 heads of romaine lettuce (or any other lettuce of your choice)

- 2 chicken breasts

- 1 cup grated Parmesan cheese

- 1 cup croutons

- Salt and freshly ground black pepper to taste


For the dressing:

- 2 cloves of garlic

- 1 egg yolk

- 2 teaspoons mustard

- 2 teaspoons vinegar

- 1 cup olive oil

- Salt and freshly ground black pepper to taste


Instructions:


1. Prepare the chicken breasts by sautéing them in a pan until golden brown on both sides. Then, slice them into strips.


2. To make the dressing, crush the garlic in a mortar and pestle, then add the egg yolk, mustard, and vinegar. Slowly pour in the olive oil, continuously whisking with a whisk. Season with salt and pepper to taste.


3. Tear the lettuce leaves and place them on a large plate or in a salad bowl. Drizzle the salad with the prepared dressing and gently toss.


4. Sprinkle the salad with chicken, croutons, and grated Parmesan cheese. Serve immediately.
